Graham Dough Topping:
6tablespoonssoftened butter
1/3cuppure cane sugar
1largeegg
1teaspoonvanilla
1/2 cupflour(use gluten free flour mix, see notes below)
1cupgraham cracker crumbs(see notes below for gluten free instructions)
1/2teaspoonBaking Powder
Instructions
Preheat oven to 350 F
In a large mixing bowl, use an electric mixer (I like KitchenAid) and beat the sugar, butter and egg until well blended; then stir in dry ingredients (flour, graham crumbs, and baking powder) until thoroughly mixed (it will be like sticky cookie dough). Set aside to use as final topping of pie.
In the prepared graham crust, place about half the mini marshmallows and spoon over about half of marshmallow fluff, as evenly as possible (you can put the fluff in microwave for about 5 to 7 seconds).
Break up chocolate bars and place on top of marshmallow layer.
Top with remaining mini marshmallows and marshmallow fluff.
Crumble the graham dough over the entire top of the the pie; it's okay to have marshmallows peeking through.
Sprinkle on the 1/2 cup of milk chocolate chips.
Bake for 20 to 25 minutes until lightly browned. Let cool about 20 minutes before serving.
Notes
Gluten Free Crumb Crust (graham substitute): Cheerios Oat Crunch Honey Oat flavor (Dark Gold Box, not white box) or Barbara's Puffins Cereal. If you are not sure you have the right Cheerios, read label, they do have a gluten free version that is fairly easy to find.You can also used regular Cheerios, substitute brown sugar for granulated sugar for color and flavor. Grind to fine mix in blender or food processor. (1-1/2 cups blended ground cereal, plus 5 tablespoons melted butter). Press into pie plate.
