May the 4th Be With You - R2D2
Straight up rhubarb pie immortalized as R2D2. The force never had it so good.

Ingredients

rhubarb, chopped**

granulated sugar
1/3
cup
cornstarch

tablespoon
lemon or orange juice
1
tablespoon
butter
1
egg
beaten for egg wash
Pie Crust - enough for 9-inch pie and extra pieces for creating R2D2

flour

tablespoons
sugar
1/4
teaspoon
baking powder

teaspoon
salt

shortening or butter (or mix of both)

cup
cold water
Instructions
Preheat Oven to 350
Filling
In a large bowl stir sugar and cornstarch together to eliminate lumps.
Stir in rhubarb and juice, set aside.
Pie Crust Dough
In a large bowl stir all dry ingredients together.
Cut in the shortening (or butter) with a large fork until crumbly, pea-sized crumbles.
Pour in the cold water all at once and stir just until combined and forms a ball.
Divide into 3 pieces (bottom crust, top crust, R2D2 cut outs).
Pie Assembly
Roll out and place bottom crust into pie plate.
Add fruit filling and dot with butter.
Brush edges with water, place on top crust, trim and crimp with fork to seal.
Brush the top crust with egg wash and add pieces. For venting use a knife and slice along various edges of design, they won't show once baked.
Brush top of added pieces with egg wash, sprinkle on a little sugar if desired.
Bake at 350 degrees for 1 hour.
Notes
**You can choose any fruit filling of your choice.
