Apple-Bacon Pie with Cheddar Crust: Be prepared; this combination is the right stuff: Tart apples, crispy bacon, and a corn masa cheddar cheese crust makes this pie is invincibly delicious!

Ingredients
Filling:
6cupssliced tart apples-use 2 varieties (Northern Spy, Granny Smith, Gala)
3tablespoonsClear Jel or cornstarch
6slicesbacon, cooked and crumbled (6 for filling, 2 for topping-see below)
dashofsalt
Topping:
1/3cupflour
1/3cupmasa harina
6tablespoonsbutter, room temp
1tablespoonsparmesan cheese
2tablespoonscheddar cheese, finely shredded
2 slicesbaconcooked & crumbled (see above)
1 Recipe Ultimate Corn Masa Crust with Cheddar
1/2cupshredded cheddar cheese
2tablespoonsmasa harina
1/2 cupflour
1/4teaspoonsalt
1/8teaspoonbaking powder
1/2teaspoonsugar
1/3cupbutter, room temp
1/2 cupfrozen corn (thawed)
1/3cupcold water
Instructions
Preheat Oven to 350 degrees
Crust
Mix dry ingredients to blend and stir in the cheddar cheese.Cut in butter with a fork until crumbly.
In blender or food processor pulse corn and water together for a few seconds, and stir into crumbled mixture that makes an easily pliable ball.
With extra masa (or flour) roll dough out to fit a 9-inch pie plate. No worries if crust tears as it is place in plate, it can easily be pushed back together (it's the masa magic)! Crimp edges with a fork.
Filling
Mix sliced apples, sugar, Clearjel (cornstarch), salt. Stir in 6 slices of bacon of cooked/crumbled bacon, set aside.
Topping
Mix the flour, masa, and cheeses.Add the softened butter and cut in with fork until crumbly. Stir in the 2 slices of crumbled bacon.
Assembly
Place apple-bacon filling into prepared crust.
Crumble topping over filling.
Bake 1 hour at 350. Let cool a bit and serve warm with extra slices of cheddar cheese if desired.
