Smores Pie a.k.a. S’mores Campfire Pie, is the chosen pie for celebrating the Day of Pi (3.14159…..) for 2018! As Pi is a “constant number” mustn’t we adhere to that numerical wonder with a circumferential slice of pie, eating at a constant rate? Contemplating Pi while eating Pie?
When you camp, there’s a campfire; meaning on arrival I am packing smores supplies, always. You will find me stationed at the ring of fire with marshmallows a blazing, eating s’mores I even share them all the while feeding loads of them to your unattended children. (I was invited, I brought sugar, your children love me.)
Too rainy outside for a backyard fire? Tempted to set your outdated kitchen ablaze making celebratory s’mores on the embers? No worries, no matter where your fire is, say hello to S’mores Campfire Pie, oven style!
Do you miss “roughing it” in the great outdoors, or not having a place to have an open fire? Sometimes we need to improvise, and the closest I could come up with was to make the pie in a cast iron skillet. The skillet baked the crust nice and crispy; just like a graham cracker over a campfire. Then there’s the chocolaty-gooey marshmallow filling, freaking fabulous. And let me just say, having a handle to grab with the skillet out of the oven is genius! Totally unrelated, but baking a pizza pie in a cast iron skillet works like a pizza stone! Try it out!
Homemade marshmallow creme is a littler easier to handle & very easy to make (checkout Todd’s Kitchen). However, today store-bought did the trick.
Following the first layers of marshmallows are the Hershey Bars. As you are placing the broken up candy bars it may seem like a lot, but really it’s not. Don’t Skimp!
An adaptation of two separate recipes came together like they were long lost friends to make the graham topping. The baking gods were with me this day; some days not so much. (In all honesty, I have created some fairly inedible mistakes. Hence, let’s just say we have some very well fed chickens and interesting compost.)
In case you are wondering, yes, chomping into the smores pie slightly warm, like from the campfire, is best. A slice will reheat nicely in the microwave in just a few seconds. Here’s a reminder below of what you are going to dive into. Don’t forget a glass of milk, safety first.
S’mores Campfire Pie
Ingredients
- 7 ounces Container Marshmallow Creme (About 1-1/3 Cups)
- 6 whole Milk Chocolate Hershey Bars (1.55 Ounce Bars)
- 1-1/2 cups Mini Marshmallows
- 1/2 cup Milk Chocolate Chips
- 1 prepared graham cracker crust (if making your own, use an 10-inch cast iron skillet or pie plate) (see notes below for gluten free instructions)
Graham Dough Topping:
- 6 tablespoons softened butter
- 1/3 cup pure cane sugar
- 1 large egg
- 1 teaspoon vanilla
- 1/2 cup flour (use gluten free flour mix, see notes below)
- 1 cup graham cracker crumbs (see notes below for gluten free instructions)
- 1/2 teaspoon Baking Powder
Instructions
- Preheat oven to 350 F
- In a large mixing bowl, use an electric mixer (I like KitchenAid) and beat the sugar, butter and egg until well blended; then stir in dry ingredients (flour, graham crumbs, and baking powder) until thoroughly mixed (it will be like sticky cookie dough). Set aside to use as final topping of pie.
- In the prepared graham crust, place about half the mini marshmallows and spoon over about half of marshmallow fluff, as evenly as possible (you can put the fluff in microwave for about 5 to 7 seconds).
- Break up chocolate bars and place on top of marshmallow layer.
- Top with remaining mini marshmallows and marshmallow fluff.
- Crumble the graham dough over the entire top of the the pie; it's okay to have marshmallows peeking through.
- Sprinkle on the 1/2 cup of milk chocolate chips.
- Bake for 20 to 25 minutes until lightly browned. Let cool about 20 minutes before serving.
