Apple, Bacon & Cheddar, Oh My! Don’t shy away or have thoughts of “What was the pie lady thinking?”  This is serious folks, a seriously joyful combination you’ve been missing.  Anyone can put bacon into anything, but when you pair it with just the right stuff PLANETS ALIGN & MAGIC HAPPENS! This pie is invincibly delicious! Apple Bacon Pie is a sweet and savory masterpiece that’s here to stay.

Tart apples make all the difference in achieving the perfect flavor combination!  It’s a little savory and a little sweet in every single bite, with no added sugar. The natural sweetness is from the apples.

The crust is my Ultimate Corn Masa crust with the addition of cheddar cheese. This is the same crust (without cheese) used with Tomato-Bacon-Zucchini Pie and Fried Green Tomato Tart.  The crust truly brings the whole pie together.  I could go total cornball on you and say “the filling and crust complete each other,” which I just did, but it’s just so darn tasty!

And while we are on the subject of crust, stir in the cheddar cheese with the dry ingredients.  Once the liquid is added it only takes a few good stirs with a fork & the dough comes right together. Also when rolling it out, don’t be concerned if the dough tears, this is a very forgiving crust, you can push it right back together. For gluten free check out my gluten free flour mix (made with Bob’s Red Mill products). Just swap out the gluten flour for the all purpose flour and your set.

Add your filling and top it off with the cheddar bacon crumbled topping and bake for 1 hour.  Let cool and serve it while it’s still warm.  Pie Heaven.

Ingredients

Filling:

  • 6 cups sliced tart apples-use 2 varieties (Northern Spy, Granny Smith, Gala)
  • 3 tablespoons Clear Jel or cornstarch
  • 6 slices bacon, cooked and crumbled (6 for filling, 2 for topping-see below)
  • dash of salt

Topping:

  • 1/3 cup flour
  • 1/3 cup masa harina
  • 6 tablespoons butter, room temp
  • 1 tablespoons parmesan cheese
  • 2 tablespoons cheddar cheese, finely shredded
  • 2 slices bacon cooked & crumbled (see above)

1 Recipe Ultimate Corn Masa Crust with Cheddar

  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons masa harina
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking powder
  • 1/2 teaspoon sugar
  • 1/3 cup butter, room temp
  • 1/2 cup frozen corn (thawed)
  • 1/3 cup cold water

Instructions

Preheat Oven to 350 degrees

    Crust

    • Mix dry ingredients to blend and stir in the cheddar cheese.Cut in butter with a fork until crumbly.
    • In blender or food processor pulse corn and water together for a few seconds, and stir into crumbled mixture that makes an easily pliable ball.
    • With extra masa (or flour) roll dough out to fit a 9-inch pie plate. No worries if crust tears as it is place in plate, it can easily be pushed back together (it's the masa magic)! Crimp edges with a fork.

    Filling

    • Mix sliced apples, sugar, Clearjel (cornstarch), salt. Stir in 6 slices of bacon of cooked/crumbled bacon, set aside.

    Topping

    • Mix the flour, masa, and cheeses.Add the softened butter and cut in with fork until crumbly. Stir in the 2 slices of crumbled bacon.

    Assembly

    • Place apple-bacon filling into prepared crust.
    • Crumble topping over filling.
    • Bake 1 hour at 350. Let cool a bit and serve warm with extra slices of cheddar cheese if desired.
